For lunch we had this delicious chicken from Gourmet Girl Cooks. We sliced the chicken into 'nuggets'; I replaced the cream with thick coconut milk. 13 yr. old loved it, but 8 yr. old does not trust new way of eating and ate plain unencrusted chicken.
This was so easy to make, it's sure to be one we do again very soon. The shredded coconut gives it a nice flavour and great texture.
